Molleja (Gizzard) was our first time trying this dish in Ibiza cuisine during our trip tothe White Island. The fried molleja (gizzard) had such an amazing taste that it actually became in Rachel’s favorite food in our European trip besides the Cochinillo in Segovia. It’s a good dish that you can partner with bread and alioli. Price for a dish in a local restaurant is around €10-12.
