1/2 cup urad dal (split black lentils)
1/2 tsp fenugreek seeds
Salt

1 tsp mustard seeds
1 tsp turmeric powder
2-3 green chilies
1 inch ginger
A few curry leaves
2 tbsp oil

  1. Prepare the Dosa Batter

Soak the rice, urad dal, and fenugreek seeds in water for at least 6 hours. Drain and grind the mixture into a smooth paste, adding water as necessary to achieve a pourable consistency, slightly thicker than pancake batter.
Ferment the batter overnight at room temperature. Add salt and stir well before cooking.

Heat oil in a pan. Add mustard seeds and let them splutter. Add onions, green chilies, ginger, and curry leaves. Sauté until the onions turn golden brown. Add turmeric and salt, mix well. Place some masala filling on one half of the dosa, fold over, and serve hot.
