How to Make Huevos Rancheros
Huevos Rancheros Recipe Ingredients
2 corn tortillas
4 eggs
1 cup tomato sauce (see below for making fresh tomato-chili sauce)
1 small onion
1 clove garlic
1 jalapeño, seeded and finely chopped (adjust based on heat preference)
1/2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
Oil for frying (vegetable or olive oil)
Fresh cilantro for garnish
1 avocado, sliced
Queso fresco or feta cheese, crumbled (optional)
Sour cream (optional)
Step By Step How to Make Huevos Rancheros
Step 1 – Prepare the Tomato-Chili Sauce
In a saucepan, heat a tablespoon of oil over medium heat. Add the chopped onion and jalapeño and sauté until the onion is translucent. Add the minced garlic and cook for another minute until fragrant.
Stir in the cumin and paprika, then add the tomato sauce. Simmer the mixture for about 10-15 minutes until it thickens slightly and season with salt and pepper.
Step 2 – Prepare the Tortillas and Eggs
In a skillet, heat a small amount of oil over medium heat. Fry the corn tortillas one at a time, about 30 seconds per side, until they are lightly crispy but still pliable. Set aside on a paper towel-lined plate.
In the same skillet, add more oil if needed, and fry the eggs to your liking (traditionally, eggs are fried sunny-side up).
Step 3 – Assemble Huevos Rancheros
Place the fried tortillas on plates. Top each tortilla with two fried eggs. Spoon the warm tomato-chili sauce over the eggs. Garnish with slices of avocado, a sprinkle of crumbled queso fresco or feta cheese, and fresh cilantro. If desired, add a dollop of sour cream.
Tips To Make Huevos Rancheros
For a more robust flavor, consider adding chopped fresh tomatoes to the sauce or using a combination of different chilies. Huevos Rancheros is best served immediately while everything is still warm.
