The Lomo Saltado is another classic Peruvian dish. “Saltado” which is the Spanish word for stir-fry, is a dish prepared in a hot wok, cooked with red wine, garlic, onions, and tomatoes, and then later partnered with fries and rice (obviously without lomo).
