1 block (14 ounces) firm or extra-firm tofu
2 tablespoons olive oil
Salt and pepper to taste

2 teaspoons brown sugar
4 cloves garlic, minced
1-2 Scotch bonnet peppers, finely chopped (adjust to taste)
2 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon lime juice
1 tablespoon fresh ginger, minced
2 green onions, chopped
1/2 teaspoon black pepper

Prepare the Tofu

Press the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel or paper towels and place a heavy object on top for about 20-30 minutes.

Make the Jerk Marinade
