1. CHILAQUILES ROJOS
Chilaquiles is one of my favorite breakfast in Mexico. Chilaquiles is a traditional breakfast dish that consists of lightly cooked tortillas that have been chopped into smaller pieces. Chilaquiles are served with salsa and a variety of breakfast dishes like eggs, cheeses, cream, or chicken, and served with refried beans.
2. CHILAQUILES VERDES
Just like the traditional Mexican breakfast chilaquiles, Chilaquiles Verdes is the same, but this time with the green or salsa verde. Green Chili sauce is much less hotter than the red ones, and might be just the salsa you needed to start your morning. Serve with some refried beans and you can have your Mexican lunch.
3. HUEVOS RANCHEROS
Huevos rancheros is a Mexican breakfast meal made of tortillas, eggs, beans, a variety of meats, all topped with a tomato chili sauce or salsa. Originally, huevos rancheros were a hearty breakfast fed to farm workers in rural Mexico!
4. HUEVOS DIVORCIADOS
Another popular version of the egg breakfasts in Mexico is the Huevos Divorciados. Basically, you have a tortilla with 2 sunny side up eggs, with 2 flavors of salsas – roja and verde. It’s known as Divorciados, because you served 2 sunny side up eggs with different salsa on each egg, served side by side. This traditional Mexican breakfast is perfect for having a savory start to your mornings, and combines a lot of Latin flavors. Huevos Divorciados or divorced eggs are best served with cheese and fresh avocado. And in traditional Mexican breakfasts or any meals, tortilla is served with everything, so you can easily eat your Huevos Divorciados with tortillas.
5. HUEVOS AHOGADOS
In traditional Mexican breakfasts, poached eggs on top of red sauce is called Huevos Ahogados. Perfect for some alternative to your usual fried eggs, and easily partnered with tortillas or your morning Mexican coffee.

Another egg dish and a traditional Mexican breakfast is the Huevos Veracruzanos or the Veracruz style eggs. These are your typical scrambled eggs wrapped in tortilla, and mixed with black bean sauce and with an extra cream. If you’re looking at a more savory and hotter breakfast, a good traditional Mexican breakfast that you can have is the Huevos a la Mexicana. Mix your fresh eggs with sauteed onions, tomatoes and jalapeños and you’re all set.
10. TETELAS
Tetelas are for those mornings that you’re looking for something quick to have. Tetelas are these traditional Mexican breakfasts where you make triangle shape treats from corn masa or corn meal stuffed with black beans. You can use refried beans with onions or plain black mashed beans.
11. GORDITAS / GORDITA DE HARINA
Gorditas are a budget friendly dish that you must try while in Mexico! Gorditas are pocket shaped patties made with the same ingredients that go into tacos and sopes, but with different fillings.

Molletes is the traditional Mexican breakfast or snack to have which resembles pizza. Basically, it uses your mollete from your home, which is a bolillo or a bread roll, cut length wise and spread, and then filled with beans, cheese, and other extras that you might love like bits of ham and eggs.

Quesadilla is a traditional Mexican food dating back to the 16th century. Quesadillas were produced by heating a corn tortilla on a griddle, filled with cheese and other contents like meat and veggies then folding it over to serve by hand.

Sopapillas are rolled dough triangles that are puffed as you fry them. They are served with dusted sugar or cinammon, to complete the sweet taste.
