Vegetarian Ajiaco is my favorite stew in Colombia from Bogota area. Ajiaco is usually made of chicken (but you can remove it to make it vegetarian) and potato soup that locals and tourists just love.

Ajiaco soup is created with 3 different kinds of potatoes and the native herb guascas. Ajiaco comfort food is a good meal when the weather gets cold in Colombia.

2. CAYEYE

Cayeye is one of the Colombian dishes coming from Caribbean Region. Cooked guineos are mashed and blended with refrito, a mixture made with tomatoes, achiote, garlic, onions, and red bell peppers. Cayeye is also known as mote de guineo.

3. Changua

Changua is a vegetarian food in Colombia popular for breakfast. Changua is a soup made of eggs, milk and coriander. A great breakfast especially if you have been out the whole night.

4. Arroz Con Coco (Coconut Rice)

Arroz con coco also called coconut rice is a popular in the list of vegetarian dishes in Colombia from the Caribbean part. Coconut rice is so delicious and you can add some vegetables or fried plantains as a side dish.

11. ABORRAJADOS

Aborrajados is a Colombian cuisine consisting of deep-fried plantains filled with cheese. Aborrajados are also made with batter made of eggs and flour that is used to fry meals, which is similar to fritters.

12. CARIMAÑOLA

Carimañola is a traditional recipe from Colombia’s and Panama’s Caribbean region. Carimañola is similar to an empanada, but the wrapper is made of cassava. Carimañola is commonly served for breakfast, but it can also be eaten as a snack or an appetizer.

13. TAMALES

Vegetarian Tamales is a popular street food in Colombia and also in Latin American. Vegetarian Tamales is steamed corn dough filled with cheese or vegetables. Tamales is served in a banana leaf and you can eat as a snack or for breakfast. Prices are around $5 USD.
