2 cups basmati rice
4 cups water
1 teaspoon salt
For the Chicken Curry:

1 pound chicken thighs, cut into pieces
1 large onion, finely chopped
3 cloves garlic, minced

1 teaspoon turmeric powder
1 teaspoon chili powder
1 teaspoon cumin powder
1 cinnamon stick
4-5 curry leaves
1 cup coconut milk
1 cup water
2 tablespoons vegetable oil
Salt to taste
For the Dal Curry (Lentil Curry):

1 cup red lentils
1 large onion, finely chopped
2 cloves garlic, minced
1 inch ginger, minced
1 teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
4-5 curry leaves
2 green chilies, sliced
1 cup coconut milk
2 cups water
2 tablespoons vegetable oil
Salt to taste
For the Coconut Sambol:

1 cup freshly grated coconut
1 small red onion, finely chopped
1-2 red chilies, finely chopped
Juice of 1 lime
Salt to taste

Step By Step How to Make Rice And Curry

Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, bring 4 cups of water to a boil.
Add the rice and salt, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked and the water is absorbed. Fluff the rice with a fork and set aside.
