How to Make Lasagna Soup
Lasagna Soup Recipe Ingredients
For the Soup
1 lb ground beef or Italian sausage (or a mix of both)
1 small onion, diced
3 cloves garlic, minced
4 cups chicken or beef broth
1 can (15 oz) crushed tomatoes
1 can (15 oz) diced tomatoes
2 tablespoons tomato paste
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
8 oz lasagna noodles, broken into pieces
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil or parsley for garnish
For Serving (Optional)

How To Make Lasagna Soup
Brown the Meat
In a large pot or Dutch oven, cook the ground beef or sausage over medium heat until browned. Break up the meat with a spoon as it cooks. Add the diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
Add Broth and Tomatoes
Stir in the crushed tomatoes, diced tomatoes, tomato paste, Italian seasoning, crushed red pepper flakes, salt, and pepper.
Pour in the broth, stir, and bring the mixture to a boil.
Add the Noodles
Add the broken lasagna noodles to the soup, reduce heat to medium, and simmer for 10-15 minutes or until the noodles are tender. Stir occasionally to prevent the noodles from sticking together.
Prepare the Cheese Mixture
In a small bowl, combine the ricotta, shredded mozzarella, and Parmesan cheeses. Stir until well-mixed and creamy.
Serve the Soup
Ladle the lasagna soup into bowls. Top each bowl with a generous dollop of the cheese mixture. Garnish with fresh basil or parsley and extra Parmesan if desired.
