Congee Recipe Ingredients
1 cup white rice (jasmine or long-grain)
8 cups water or chicken broth
1-inch piece of ginger, peeled and sliced
2-3 cloves garlic, minced
1 tablespoon soy sauce
Salt to taste
Optional Toppings:
Cooked chicken or pork
Century eggs
Scallions, chopped
Cilantro, chopped
Fried garlic or shallots
Soy sauce or fish sauce

Step By Step How to Make Congee
Rinse the Rice
Rinse the rice under cold water until the water runs clear to remove excess starch.
Cook the Rice
In a large pot, combine the rinsed rice, water or chicken broth, ginger, and garlic. Bring to a boil over high heat.
Simmer
Reduce the heat to low and simmer the mixture, stirring occasionally to prevent sticking, for about 1 to 1.5 hours or until the rice has broken down and the congee reaches your desired consistency. Add more water or broth if it becomes too thick.
Season
Stir in soy sauce and salt to taste.
Serve
Ladle the congee into bowls and add your desired toppings.
