200g rice vermicelli noodles
2 tablespoons vegetable oil
1 medium onion, thinly sliced
2 cloves garlic, minced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium carrot, julienned
1 cup snow peas, trimmed and halved
2 eggs, lightly beaten
200g shrimp, peeled and deveined (or chicken breast, thinly sliced, or tofu)
3 green onions, sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon curry powder
1 teaspoon turmeric powder
1 teaspoon sugar
Salt and pepper to taste

Optional Garnishes:

Fresh cilantro, chopped
Lime wedges

Step By Step How to Make Singapore Noodles

Prepare the Noodles

Place the rice vermicelli noodles in a large bowl and cover them with hot water. Let them soak for about 5-7 minutes, or until they are soft. Drain and set aside.

Cook the Protein

In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp (or chicken or tofu) and stir-fry until cooked through. Remove from the wok and set aside.
